Quick ‘n’ easy simple supper… by Tania X

I don’t know why but I always feel that its my job to produce a nutritious home cooked supper around 6pm every night in our house, I think its my lovely Mum’s fault!  Anyway, here’s tonights, which is quick and easy, looks impressive and tastes great. It’s a take on a Caesar salad, stick a whole chicken, covered in butter, salt & pepper,  in the oven on 170 degrees for about hour and twenty minutes (or until the juices run clear). Break up and wash a couple of little gems or a cos lettuce and leave to drain.  How have your 5pm glass of wine and read a mag for an hour!! Once the chicken is cooked take it out of the pan and let it rest for about 20 minutes, throw some torn up pieces of bread into the same pan ( sourdough or chewy brown works well), toss them in the juices add some strips of Prosciutto or smoked streaky bacon and put back in the oven for about 15 mins until the bacon is crispy. At this time of year I also throw in a bunch of Asparagus. Next make a dressing, you can cheat and make Jamie’s easy Caesar dressing or even buy one, I like Mary Berry’s, up to you depends what you can be bothered with, toss the leaves in the dressing throw lots of grated Parmesan on the salad. I like serving the croutons and bacon separately from the chicken and salad, a “make your own Caesar”
Honestly such an easy simple supper but yum!
